Begin the class by learning the time-honored recipe to make croissant dough from scratch using flour, eggs, sugar and yeast. Then, master the technique to knead and laminate the dough to get the perfect flaky layers and bake until golden brown. Add chocolate to the batter to make pains au chocolat, fresh raisins for raisin rolls and almond slivers to make almond croissants. Finish the class by making crookies, that feature chocolate chips and a soft, flaky finish.
