The class begins by learning how to make a black bean stew with savory porchetta or chorizo mixed in. Then, discover the secrets to making the perfect mole sauce. Practice knife skills by chopping Roma tomatoes, tomatillos, white onions and dried peppers for a smoky and spicy sauce. Mix high-quality ingredients and make handmade tortillas cooked until golden brown. Then, fill your tacos with zucchini blossoms, portobello mushrooms and white onions for a fragrant vegan taco. Finish by making a sweet sorbet using flambéed seasonal fruit for dessert.

Sophia and Alberto greeted us at the door of the townhouse where we had our cooking lesson, and immediately made us feel welcome. We toured the market where they had bought our produce earlier that day, and showed us all the grocery vendors and the little food stalls. Then we walked back to the townhouse and made tortillas, salsa, tacos, and guacamole. They were fantastic hosts and teachers, and we had a great time. They made us feel so at home, instead of a class the experience felt like having dinner at home with your fun friends.
